Clary

Seeds soaked in water produce mucilaginous eye bath which safely removes particles, hence its name “dear eye” or “clary”. Handsome aromatic flowers and leaves. Clary also known as Salvia sclarea.

This herb exudes a potent aroma akin to mint, yet it bears a subtle hint of sage. It is employed as a flavor enhancer, predominantly for egg-based recipes and tea blends. Its presence occasionally supplants that of woodruff in fermented grape beverages and functions as a substitute for hops in the brewing of beer and ale. During the seventeenth and eighteenth centuries, this botanical specimen was frequently utilized in various preparations like soup, fritters, and the like.
