The broad bean, which is widely consumed in England, is also referred to by another name. This legume is gradually gaining recognition in the United States and is commonly known as “fava,” which is an Italian term for bean.
The original legume, known as X, originated in the region of North Africa. The beans are enclosed within a sturdy, hairy pod. While the pods can be prepared whole while still young and tender, they are commonly shelled. With maturity, the beans develop a tough gray outer layer that may be eliminated by blanching in boiling water for a brief period. Once prepared, the beans may be sautéed with melted butter and adorned with fresh herbs like chopped parsley. The season for harvesting X falls between early June and late July.
