High-fructose corn syrup (HFCS)

Com syrup that has been industrially treated to break it down into glucose units, which are then converted into fructose.


In the grocery store, there is a sweetener made from corn that makes up over 40% of all calorie-based sweeteners available. Each person had an average of 59 pounds of this sweetener produced in 2005. This liquid sweetener is concocted by means of a complicated process that requires breaking down cornstarch with enzymes, resulting in a blend of fructose and glucose that is approximately equal in proportion.
