An enzyme that will cleave protein-bound biotin. Biotinase has been cloned and sequenced and its distribution throughout the body determined. Although it is active in the intestinal tract, its activity is not sufficient to catalyze all of the bound biotin found in food. It is an enzyme needed for biotin recycling.
