Knee-action knife

The kitchen tool being described is a slender knife that measures approximately six to eight inches in length. Its unique design resembles that of a large sewing needle, with the blades forming an “eye” and the cutting edges located on the inside. This type of knife is primarily intended for the peeling of thin-skinned fruits and vegetables, as the “eye” structure allows for peelings or parings to be released with ease. The blades are attached to the handle in such a way that they are able to pivot on a short radius, making it simpler to follow the contours of the food being peeled. This knife is also referred to as a “floating blade knife”.
