    Asparagus spicy nori Thai noodle salad recipe

    Ingredients

    • 1 cup GU Chai (Asian chive- Chinese leek which looks like noodles growing inside the bamboo)
    • 1 cup of baby asparagus
    • ½ cup green shredded papaya
    • ½ cup raw Nori (soaked in warm water for a while)
    • ½ cup Mung bean sprouts
    • ½ cup fresh baby green peas
    • Pinch of red ground chili (optional)
    • 1 tbsp black rice vinegar
    • 1 garlic clove
    • Pinch of ground white pepper
    • 1 tbsp lemon juice
    • 2 tbsp olive oil
    • 1 tsp tamari
    • Salt
    How to Make It
    1. Place all the ingredients into a glass bowl and mix.
    2. Marinate and let them stay for 1 hour in the refrigerator before serving.
