- ½ cup panko bread crumbs
- ½ cup grated Parmesan (2 ounces)
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- Kosher salt and black pepper
- 1½ pounds beefsteak tomatoes, sliced ½ inch thick
How to Make It
- Toss together the bread crumbs, Parmesan, oil, and oregano; season with ¾ teaspoon salt and ¼ teaspoon pepper.
- Place the tomatoes in a baking dish, overlapping slightly. Sprinkle with the bread crumb mixture and bake at 350°F until golden brown, 20 to 25 minutes.
