    Banana and raisin drops recipe

    A crisp, cake-like cookie with a soft center baked using soy flour.

    • Yield: 14 to 16
    • Preparation Time: 8 Minutes
    • Cooking Time: 10 Minutes
    • Total Time: 18 Minutes

    Ingredients

    • 1 cup whole wheat flour
    • 2 tablespoons low-fat soy flour
    • ½ teaspoons baking soda
    • ½ teaspoons salt
    • ½ teaspoons nutmeg
    • ½ teaspoons pumpkin pie spice
    • ½ cup raisins
    • 1 small ripe banana
    • 2 eggs
    • ½ cup dates (pitted, packed)
    • 1 teaspoon vanilla extract
    How to Make It
    1. Preheat the main oven to 400 degrees F.
    2. In a large bowl, combine the dry ingredients along with the raisins.
    3. In a food blender, blend the banana, egg, dates and vanilla extract until a consistent mixture. Transfer the mixture to the dry ingredients. Stir well to combine.
    4. Drop the mixture onto a cookie tray or sheet using a teaspoon. Bake in the oven for 6-10 minutes, or until a knife placed in the center of the cookies comes out clean.
    5. Allow the cookies to cool before serving.
