Chicken, shrimp, and sausage stew recipe

The third recipe which looks almost like the previous two is the Chicken, Shrimp, and Sausage Stew. This is a little different from the previous two, especially with the inclusion of chicken. This cooks very easily too, and it is as delicious as it sounds.

    Ingredients

    • 1 pound of andouille sausage, cut into ½ inch pieces
    • 6 chicken thighs (I prefer skinless - 2¼ lbs.)
    • 3 cups chopped onions
    • 2 1⁄3 cups chopped green bell peppers
    • 1¼ cups chopped red bell peppers
    • 6 cloves garlic, minced
    • 1 tablespoon dried oregano
    • 2 teaspoons dried thyme
    • 1 tablespoon paprika
    • 1 (28 ounce) can diced tomatoes with juice
    • 1 (14½ ounce) can chicken broth
    • 1 cup dry white wine
    • 1 pound of uncooked large shrimp, peeled and deveined
    • salt and pepper
    How to Make It
    1. Select the saute function on the foodi to cook the sausage for about 4 minutes or until it gets browned.
    2. The next thing to do after sautéing the sausage is to transfer the sausage to a large bowl.
    3. After that, the next step is to sprinkle the chicken thighs with pepper and salt.
    4. Place the chicken in your foodi and sauté it until it becomes brown on both sides.
    5. After getting your chicken browned, you can then transfer the chicken to the bowl with the sausage.
    6. The next thing is to discard all the drippings; however, you should leave at least 1 tablespoon of dripping.
    7. After draining your pot, you should add onions and pepper to it; cook using the sauté function for 15 minutes, until the onions become soft, golden brown and tender.
    8. The next step is to add garlic, oregano, thyme and paprika; sauté them for 2 minutes. After this, it is now time to return the sausage and chicken into your Foodi.
    9. Add tomatoes with juice, chicken broth, and wine.
    10. Bring the mixture to a boil.
    11. Set the temperature to medium, cover and simmer until chicken is cooked and very tender.
    12. The next step is to add shrimp and simmer for about 5 minutes.
    13. Apply seasoning to taste with salt and pepper.
