    Chilled Green Beans with Mint Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesOne of my greatest summer pleasures is stepping outside to my herb garden, where with a few snips I can give a familiar vegetable a fresh new spin.

    • Yield: 6 Servings

    Ingredients

    • 1½ pounds fresh green beans
    • 2 tbsp olive oil
    • 1 tbsp white balsamic vinegar
    • 2 cloves garlic, quartered
    • 1 tbsp chopped fresh mint
    • Salt and pepper to taste
    How to Make It
    1. Trim and slice the beans into bite-size pieces. In a large saucepan, bring water to a boil. Add the green beans and cook for 3 to 4 minutes, until the beans are crisp-tender. Immediately drain the beans. Cool to room temperature, then store in the refrigerator until ready to serve.
    2. Just before serving, toss the beans with oil and vinegar. Toss again with the garlic and mint. Season with salt and pepper.
