This chocolate cake has a very interesting and bright taste.

    • Yield: 8 portions (9″ cake)

    Ingredients

    • 6 eggs
    • 2 (100 g) medium carrots
    • 8 oz 1 cup Whole grain flour
    • 2 tbsp Liquid honey
    • 2 tbsp Brown sugar
    • 2 tbsp Olive/coconut oil
    • 2 tbsp Cacao powder
    • 1 tsp Baking powder
    For the Topping
    • 60 g Dark chocolate, 12 pieces
    • 1 oz 3 tbsp Greek yogurt
    • 1 medium orange
    How to Make It
    1. Grate orange peel, and keep 3 tbsp. of peel for the cake.
    2. Preheat the oven to 380°F.
    3. Prepare the dough. You can make it two ways: using a blender or manually.
    4. Way 1: Clean carrots and remove the peel; place them in a blender cup. Add 2 tbsp. of the orange peel and the rest of ingredients for the dough in a blender and mix well.
    5. Way 2: Whisk eggs, honey, and sugar in a bowl. Grate carrots and add to the bowl. Add orange peel and the rest of ingredients. Mix well using a tablespoon.
    6. Prepare 2 baking trays. Apply oil on the tray surface or place a layer of wax paper at the bottom of each tray.
    7. Pour out half the dough in each tray; spread it using a tablespoon.
    8. Place the trays in the oven for 40 minutes.
    9. To check if the dough is ready just poke it with the fork—the pieces of the dough should not stick on a fork when you remove it. Extend the time by 5–10 minutes, if necessary.
    10. Remove the cake and cool it down.
    11. Prepare the Chocolate Cream
    12. Melt 8 pieces of the chocolate (50 g) in the microwave for 3 minutes.
    13. Mix melted chocolate—it should be soft like a butter. Add Greek yogurt and mix well using tablespoon.
    14. Prepare the Topping
    15. Grate 2 pieces (10 g) of the chocolate and place it in a fridge. Cut the orange into small pieces.
    16. Decorate your Cake
    17. Place the first layer of the cake on a serving plate, add chocolate cream and spread it using tablespoon.
    18. Place the second layer of the cake on a top, add chocolate cream on it and spread it using tablespoon.
    19. Add orange pieces on the top and sprinkle with grated chocolate and orange peel.
