    Coconut rice pudding recipe

    Ingredients

    • 2½ cups low-fat milk
    • 14-oz can light coconut milk
    • ½ cup turbinado sugar
    • 1 cup arborio rice
    • 1 stick cinnamon
    • 1 cup dried cranberries, optional
    How to Make It
    1. Spray crock with nonstick spray.
    2. In crock, whisk together the milk, coconut milk, and sugar.
    3. Add in the rice and cinnamon stick.
    4. Cover and cook on Low about 2–2½ hours, or until rice is tender and the pudding has thickened.
    5. Remove cinnamon sticks. If using cranberries, sprinkle on top of each bowl of Coconut Rice Pudding.
