    Ingredients

    • 2 cucumbers
    • 1 tbsp extra virgin olive oil
    • 2 tsp white balsamic vinegar
    • Salt and pepper to taste
    • Fresh or dried oregano to taste
    How to Make It
    1. Peel the cucumbers and slice into discs, about ¼-inch thick.
    2. Place the cucumbers in a shallow bowl and drizzle with the olive oil. Toss, add the vinegar, and toss again. Season with salt and pepper, sprinkle with oregano, and serve.
