Nearly as famous as both Debbie Harry and Marilyn Monroe put together, blondies, or blond brownies as they’re sometimes known, have a base of brown sugar rather than melted chocolate through them. Soft, fudgy and oh-so-sweet, these will definitely make you sing.
Ingredients
- 4 oz (115 g) butter
- 7 oz (200 g) soft light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 4½ oz (125 g) plain flour
- Pinch of salt
- 3 oz (75 g) dark chocolate drops (or chopped chocolate)
- 2 oz (50 g) white chocolate drops (or chopped chocolate)
- 3 oz (75 g) pecans, chopped
How to Make It
- Preheat the oven to 180°C (350°F), Gas mark 4. Line the base and sides of the cake tin with baking parchment.
- Melt the butter, pour into a mixing bowl, then add the sugar and the egg and whisk to mix together. Next, add in the remaining ingredients and stir to mix. Tip into the prepared tin and bake for 25–28 minutes until dry on top, but still ever so slightly unset in the centre under the crust.
- Allow to cool for at least 20 minutes before cutting into squares.
