    Grapefruit madeira recipe

    • Yield: 1 standard sized loaf

    Ingredients

    • 250 g softened butter
    • 450 g castor sugar
    • 4 extra large eggs
    • 400 g cake flour
    • 400 g cake flour
    • a pinch of salt
    • 250 ml milk
    • 1 vanilla pod, split and deseeded
    • 2 grapefruits zest
    • 1 grapefruit, peeled and broken into segments
    How to Make It
    1. Preheat the oven to 170 °C. Grease and line the base of a 22 × 12 cm loaf pan.
    2. To make the Batter
    3. Cream together the butter and sugar until thick, pale and fluffy. Add the eggs one at a time, beating after each addition. Sift together the dry ingredients. Alternately add the dry ingredients and milk to the butter mixture to form a smooth batter. Fold in the vanilla seeds and grapefruit zest.
    4. Baking and Cooling
    5. Spoon into the prepared loaf pan and spread out evenly using a rubber spatula. Bake for 1 hour or until golden on the top and a metal skewer inserted into the centre comes out clean. Turn out onto a wire rack and leave to cool.
