    Mini chocolate crisp bites recipe

    These look like mini brownies at first glance, but when you take a bite you get a chocolaty crunch like a candy. These are quite lovely frosted. I make little flower decorations on the tops of each.

    • Yield: 2 dozen

    Ingredients

    • 10 ounces (280 g) Enjoy Life semisweet chocolate chips
    • 3 cups (80 g) Enjoy Life Perky’s “Nutty” Rice or small-shaped cereal
    For Frosting
    • ¼ cup (50 g) Spectrum Organic Shortening
    • 1 teaspoon (5 ml) vanilla extract
    • 2 cups (240 g) powdered sugar
    • 1 tablespoon (15 ml) water
    • Dash of salt
    How to Make It
      To make the Cookies
    1. Place chocolate chips in a large microwave-safe bowl. Microwave on medium heat at 30-second intervals, stirring at each interval, until melted and smooth. Stir in cereal with a wooden spoon and coat evenly
    2. Grease a mini muffin pan. Use a small ice cream/cookie scoop to drop balls of mixture into each cup of the pan. Flatten (wet your hands to help prevent sticking, if desired).
    3. Place in the refrigerator to chill. When firm and chilled use a small knife to remove each cookie. Set on a flat surface.
    4. To make the Frosting
    5. In a food processor, combine all frosting ingredients. Blend until smooth. Decorate cookies with frosting.
