    My momma’s meat loaf recipe

    • Yield: 8 Servings, 1 slice per serving

    Ingredients

    • 2 pounds 95% extra-lean ground beef
    • ½ green bell pepper, finely chopped
    • 1 onion, finely chopped
    • 1 egg
    • 1 cup rolled oats
    • 1 cup ketchup, divided
    • 1-½ teaspoons garlic powder
    • ¼ teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon brown sugar
    How to Make It
    1. Preheat oven to 350°F. Coat a 9 × 5-inch loaf pan with cooking spray.
    2. In a large bowl, combine ground beef, green bell pepper, onion, egg, oats, ¾ cup ketchup, garlic powder, salt, and pepper. Using your hands, gently mix just until combined. (Try not to over-handle mixture.) Place in prepared pan.
    3. Bake 1 hour. Brush with remaining ketchup, sprinkle with brown sugar, and bake 10 to 15 additional minutes, or until no pink remains. Drain any excess liquid, let cool 5 to 10 minutes, then cut into 8 slices and serve.
