    Oven roasted rabbit recipe

    While not common in North America, eating rabbit is very common in many Italian families. Rabbit is a delicious meat that can be prepared in many different ways: baked, grilled, or cooked in a stew or casserole. Rabbit meat is similar to chicken, but can have a richer gamey taste.

    • Yield: 6 pieces
    • Preparation Time: 30 Minutes
    • Cooking Time: 40 Minutes

    Ingredients

    • 1 rabbit, fresh, or frozen and thawed, cut into 6 pieces
    • 1 cup white wine
    • 3 garlic cloves, crushed
    • 1/8 cup unsalted butter
    • 3 tablespoons extra-virgin olive oil
    • 1 teaspoon dried rosemary
    • salt and pepper to taste
    How to Make It
    1. Preheat oven to 325 degrees F.
    2. Generously season the meat with salt, pepper, and rosemary.
    3. In an oven-safe pan, melt the butter and heat the oil on medium-heat. Add the garlic and cook for one minute. Increase the heat to medium-high and sear both sides of the meat, about three minutes per side. Deglaze the pot with wine, cover, and transfer to the oven.
    4. Roast for 40 minutes. Remove from heat.
