    Penne with broccoli and shiitake mushrooms from Sergey Markin recipe

    Ingredients

    • 400 g Penne durum wheat
    • 1 kg broccoli
    • 5-6 large shiitake
    • 1 small bulb of shallot
    • 1 clove of garlic
    • 1 sprig of thyme
    • olive oil
    • salt, freshly ground black pepper
    How to Make It
    1. Peel and finely slice the shallots. Garlic, slightly crush, peel and leave whole. Have shiitake mushrooms, remove tough stems, caps thinly slice.
    2. Broccoli remove the hard bottom stem. Head disassemble into florets and blanch in weakly boiling salted water, 5 min. part of the leave, the rest whisk blender, adding salt, pepper and olive oil.
    3. Bring to a boil Penne in a large number of generously salted boiling water. At the same time in a deep frying pan with a thick bottom olive oil saute the garlic, sprig of thyme, the shallots and shiitake, 3 min. Add broccoli puree,stir, warm. If sauce is very thick, add water from the boiling pasta.
    4. Penne pasta is ready drain in a colander, shake off excess water, mix the pasta with the sauce in the pan. Season with olive oil, arrange on a plate, decorate with remaining inflorescences broccoli and serve immediately.
