    Sichuan cucumber salad recipe

    Ingredients

    • 2 cucumbers
    • 2 tsp salt
    • 8 cloves garlic
    • 3 red chilli peppers
    • 3 red chilli peppers
    • 4 tbsp soy sauce
    • 1 tsp ground Sichuan pepper
    • 2 tbsp coriander leaves
    How to Make It
    1. Use the flat of a large kitchen knife to smash the cucumbers. You will feel much better afterwards.
    2. Coarsely chop up the cucumbers and mix with the salt. Leave to stand for 10 minutes.
    3. Drain off the excess liquid and wash the cucumber pieces under running water.
    4. Finely chop the garlic and chillies. Put the peanut oil in a hot frying pan and sweat the garlic and chillies over a medium heat for 2–3 minutes.
    5. Deglaze the pan with the soy sauce and add the Sichuan pepper.
    6. Pour the hot dressing over the cucumber pieces, leave to cool a little and sprinkle coriander leaves over the top.
