    Tomato, corn, and red cabbage salad recipe

    Ingredients

    • 3 tablespoons fresh lime juice
    • 2 tablespoons olive oil
    • Kosher salt and black pepper
    • ½ pound cherry tomatoes, halved
    • 2 cups corn kernels (from 2 ears)
    • 1 avocado, cut up
    • ¼ head red cabbage (about ½ pound), thinly sliced
    • 4 scallions, sliced
    How to Make It
    1. Whisk together the lime juice and oil; season with ½ teaspoon salt and ¼ teaspoon pepper.
    2. Add the tomatoes, corn, avocado, cabbage, and scallions and toss to combine.
