    Turkey & rainbow salad sandwich recipe

    • Preparation Time: 10 Minutes

    Ingredients

    • 1 teaspoon cranberry sauce or Dijon mustard, to taste
    • 2 slices wholemeal bread
    • 90 g cooked turkey breast, sliced
    • 20 g Swiss cheese, sliced
    • 1 small handful lettuce leaves
    • ¼ medium carrot, coarsely grated
    • ¼ medium cucumber, thinly sliced
    • ½ medium tomato, sliced
    • 1 small handful alfalfa sprouts
    How to Make It
    1. Spread the cranberry sauce or mustard on one slice of bread. Layer the turkey, cheese, lettuce, carrot, cucumber, tomato and alfalfa.
    2. Top with the other slice of bread.
    3. To serve, place on a serving plate and cut in half.
