    Two-layer coconut apple pie recipe

    Ingredients

    • 9” in diameter pie crust (pastry shell)
    • 5 apples, peeled and chopped
    • 8 tbsp shredded coconut
    • 2 eggs
    • half cup of coconut milk
    • half cup of cream cheese
    • 1 cup of sugar
    • 1 tsp baking powder
    • 1 tsp vanilla
    • 3 oz unsalted butter
    How to Make It
    1. Preheat the oven to 200˚-220˚ Fahrenheit and then coat the pie pan with the unsalted butter and place the pastry shell inside.
    2. In a bowl, combine the apples, half of sugar, baking powder and vanilla and mix well. Stir in the shredded coconut and spoon the mixture into the pastry shell.

    4. Beat the remaining sugar with the cream cheese until the smooth consistency and then add the coconut milk, eggs and pour some water. Now whisk the mixture until it has a homogenous mass and smooth consistency, use a hand mixer.
    5. When the mixture is ready spoon it over the apples pie and bake the pie for 30 min. more.
    6. 5 min. before the pie is ready open the oven and sprinkle some shredded coconut over the apple pie.
