    Warm barley and caramelized mushroom salad recipe

    Ingredients

    • ¼ cup olive oil plus 2 Tbsp
    • 2 lbs mixed mushrooms
    • 5 cups cooked hulled barley
    • 2 tsp chopped fresh sage
    • ¼ cup fresh lemon juice
    • ¼ cup olive oil
    • Kosher salt
    • Freshly ground pepper
    How to Make It
    1. In a large skillet, heat 2 tablespoons olive oil. Add ¾ pound of mixed mushrooms and cook over high heat, stirring, until golden, about 5 minutes. Transfer to a bowl. Repeat twice to cook all of the mushrooms, adding more oil as necessary.
    2. Stir in cooked barley, sage, lemon juice and ¼ cup olive oil; season with salt and pepper. Serve warm or at room temperature.
