  • 1 lb (450 g) potatoes
  • 1 lb (450 g) cabbage
  • 2 medium leeks washed, trimmed and thinly sliced
  • 1 cup (250 ml) milk
  • salt and pepper to season
  • pinch ground mace
  • 4 oz (110 g) butter
How to Make It
  1. Boil the potatoes in a large saucepan until tender. Remove and set aside.
  2. Now add the cabbage using the same water and boil for about 5 minutes. Drain and reserve.
  3. Now put the leeks in a saucepan, cover with milk and simmer until tender.
  4. Season with salt and pepper and mash potatoes, then stir in the leeks and milk. Now stir in the cabbage and heat through. Make a hole in the centre and tip in the melted butter. Combine well. Serve hot.
