    Easy Mortadella Ravioli Recipe

    Ketogenic Cookbook - Nutritious Low-Carb

    Ingredients

    • 12 thin slices mortadella or good-quality bologna
    • 12 ounces goat cheese
    • 12 fresh basil leaves
    • 1½ cups marinara sauce, homemade or store-bought
    • 1 tablespoon unsalted butter or coconut oil
    How to Make It
    1. Lay the slices of the mortadella on a clean, dry work area. Spoon 1 ounce (about 2 tablespoons) of goat cheese in the center of each slice and lay a basil leaf on top of the cheese.
    2. Fold each mortadella over the cheese to form a square packet. Secure the edges with toothpicks, creating mortadella ravioli.
    3. Warm the marinara sauce in a saucepan over medium-low heat.
    4. While the sauce is warming, fry the ravioli: Heat the butter in a large sauté pan over medium-high heat. Fry each mortadella ravioli until the ravioli is slightly charred on both sides and the cheese is melted, about 6 minutes. Remove from heat and discard the toothpicks.
    5. our the warmed marinara sauce on a serving platter. Lay the fried ravioli on top and serve.
