    Freezer Fruit Cobbler Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesAt the height of summer, I stock my freezer with fresh blueberries, raspberries, strawberries, and peaches. In the depths of winter, I love to revisit those bright summer tastes and textures with this simple, cozy cobbler.

    • Yield: 12 Servings

    Ingredients

    • 4 cups frozen fruit
    • ½ cup sugar (less if the fruit is sweet)
    • 2 tbsp cornstarch
    Crust
    • 4 ounces butter, softened
    • ¾ cup sugar
    • 1 egg, lightly beaten
    • 1 cup flour
    • 1 tsp baking powder
    • ½ tsp baking soda
    How to Make It
    1. Preheat the oven to 325 degrees.
    2. Scatter the fruit in an 8-by-8-inch baking dish. Combine the sugar and cornstarch and sprinkle over fruit.
    3. To prepare the crust, combine the flour, baking powder, and baking soda in a small bowl and set aside.
    4. In a medium bowl, combine the butter and sugar. Stir in the egg. Gradually add the flour mixture. The batter will seem quite stiff — somewhere between a heavy cake batter and a light biscuit dough.
    5. Drop the batter, one spoonful at a time, over the top of the fruit. The batter will settle into the fruit as it bakes.
    6. Transfer the cobbler to the oven and bake for 60 minutes, until the top is lightly browned and cooked through.
