    Gruyere Stuffed Bell Peppers Recipe

    6 Ingredient Ketogenic Cookbook

    Ingredients

    • 2 small bell peppers, any color
    • 1 cup shredded Gruyere cheese
    • 2 tablespoons finely chopped parsley
    • 1 medium clove garlic, minced
    • 2 green onions, chopped
    • 10 green olives, pitted and chopped
    Essentials
    • Salt and pepper to taste
    • 2 tablespoons olive oil
    Optional/ Garnish
    • ¼ cup whole leaf basil
    How to Make It
    1. Preheat oven to 375°F.
    2. Cut off the tops of the bell peppers and remove the core and seeds. Rub the pepper with olive oil, place in a small Dutch oven, and roast for about 20 minutes. Allow to cool slightly.
    3. In a small bowl combine the minced garlic, green onion, parsley, and olives. Add the shredded Gruyere and mix well.
    4. Stuff each pepper with the cheese mixture.
    5. Transfer back to the oven and cook for an additional 5 minutes.
    6. Transfer to a serving plate, garnish with basil, and enjoy.
