    Low-Carb Slow Cooker 218 healthy recipes for your favorite comfort foods

    Ingredients

    • 6 cups potatoes cut into ¾-inch cubes
    • 1 large onion, chopped (1 cup)
    • 1 cup water
    • 0.66 cup cider vinegar
    • ¼ cup packed brown sugar
    • 2 Tbsp quick-cooking tapioca
    • ½ tsp salt
    • ¼ tsp celery seeds
    • ¼ tsp black pepper
    • 4 slices turkey bacon, cooked according to package directions and chopped
    • Sliced green onions (optional)
    How to Make It
    1. In a 3-½- or 4-quart slow cooker combine potatoes and onion. In a medium bowl combine the water, vinegar, brown sugar, tapioca, salt, celery seeds, and pepper; pour over all in cooker.
    2. Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4-½ hours. Just before serving, stir in bacon. If desired, sprinkle with sliced green onions.
