    How to Make Pear and Walnut Salad

    The Kitchen Diva's Diabetic Cookbook 150 Healthy, Delicious RecipesPears and walnuts are a beautiful salad combination. The crisp sweetness of the pears and the toasted crunchiness of the walnuts, combined with the sweet-and-sour fruit vinaigrette, make this a simple meal to savor.

    • Yield: 8 Servings

    Ingredients

    Dressing
    • ¼ cup orange juice
    • 3 tablespoons seasoned rice wine vinegar
    • 3 tablespoons olive oil
    • ¼ teaspoon salt
    • ½ teaspoon freshly ground black pepper
    • 4 cups mixed salad greens
    • 2 large pears (Anjou, Bartlett, Bosc, or Comice), cored and thinly sliced
    • ½ small red onion, thinly sliced and separated into rings
    • ¼ cup chopped walnuts, toasted
    How to Make It
    1. For the dressing, whisk together all the ingredients in a small bowl. Set aside.
    2. Arrange the greens on eight salad plates. Divide the pears, onion, and walnuts among the salads. Drizzle with the dressing and serve.
