    How to Make Pure Plum Tomato Sauce

    Simple, Fresh & Healthy A Collection of Seasonal RecipesIf I had to choose one recipe to illustrate my cooking philosophy, this would be the one. It’s utterly simple, fresh, and healthy. And it comes straight from Italy, by way of my greatuncle’s daughter’s husband, who happens to be a chef. Don’t be alarmed by the nine cloves of garlic. They melt into the sauce and add amazing depth to the fresh, sweet tomatoes.

    • Yield: 4 to 6 Servings

    Ingredients

    • 10 fresh plum tomatoes (or round)
    • ¼ cup olive oil
    • 9 cloves garlic, minced
    • 1 tsp salt
    • 0.12 tsp ground black pepper
    • 1 tsp sugar (if necessary)
    • ½ cup fresh basil leaves, chopped
    • grated Romano cheese, for garnish
    How to Make It
    1. Halve the tomatoes, then cut into ½-inch cubes.
    2. Add the oil to a large skillet and toss in the garlic. Place over medium heat and stir watching closely until very lightly browned, about 1 minute.
    3. Add the tomatoes, salt, pepper, sugar, and basil to the saucepan. Cook for 15 minutes.
    4. Serve over angel-hair pasta, garnished with grated Romano cheese.
