    Maple-Roasted Sweet Potatoes Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesAlmost too good to be good for you! You don’t need much maple syrup, but you should definitely use the real thing.

    • Yield: 4 to 6 Servings

    Ingredients

    • 3 large sweet potatoes
    • 2 tbspĀ olive oil
    • 2 tbspĀ pure maple syrup
    • Salt and freshly ground black pepper to taste
    • fresh parsley for garnish (optional)
    How to Make It
    1. Preheat oven to 350 degrees.
    2. Peel sweet potatoes and cut into 1-inch cubes.
    3. In a mixing bowl, toss the sweet potatoes with oil and maple syrup.
    4. Season with salt and pepper.
    5. Transfer to a shallow baking dish and roast for 45 minutes or until tender when pierced with fork. About halfway through, turn with a spatula so potatoes brown evenly. Sprinkle with parsley if desired.
