    Spinach and Strawberry Salad Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesWith strawberries practically in our genes, the Hafner family can never get enough of these sweet ruby jewels. I love the idea of introducing strawberries into a savory salad, especially when you add creamy cheese and crunchy walnuts to this colorful mix.

    • Yield: 4 Servings

    Ingredients

    Salad
    • 8 cups baby spinach leaves, washed and dried (or mixture of spinach and torn romaine leaves)
    • ¼ cup Vidalia onion, thinly sliced
    • 2 cups strawberries, washed and sliced
    • 1 cup fresh mozzarella, cubed
    Dressing
    • ¼ cup olive oil
    • 2 tbsp white balsamic vinegar
    • 2 tbsp orange juice
    • 1 tsp honey
    • salt and pepper to taste
    • 0.33 cup chopped walnuts or sliced almonds
    How to Make It
    1. In a small bowl, whisk together dressing ingredients. (Dressing will keep covered in refrigerator for two days.)
    2. In a salad bowl, combine the spinach, onion, strawberries, and mozzarella. Drizzle with dressing and toss gently.
    3. Sprinkle with nuts and serve immediately.
