    Stuffed Chicken Thighs with Macadamia Pesto Recipe

    Ingredients

    • 3 oz (84 g) macadamia nuts
    • ½ cup (8 g) chopped basil
    • 3 tbsp (45 ml) olive oil
    • 2 tbsp (30 ml) MCT or coconut oil
    • 2 cloves garlic
    • ½ tsp sea salt
    • 4 boneless chicken thighs, about 4 oz (112 g) each
    How to Make It
    1. Preheat the oven to 350°F (177°C).
    2. Add the macadamia nuts, basil, olive oil, MCT or coconut oil, garlic and salt to a small food processor. Mix on the high setting until a coarse paste is formed.
    3. Wash the chicken thighs and pat them dry; lay them flat, inside up in a glass oven pan. Place about 2 tablespoons (30 g) of the macadamia pesto filling on each chicken thigh. Fold the thighs close, then spread the leftover pesto on top.
    4. Bake for 30 minutes. When the thighs are done, place them under the broiler on high heat for 5 minutes to brown the top.
