    Cuban Pork with Black Beans and Rice Recipe

    Simple, Fresh & Healthy A Collection of Seasonal RecipesOur niece and one-time Floridian, Lisa, introduced this crowd-pleaser at a huge Hafner family reunion. The citrus-infused pork tickles the palate and spares the chef by simmering all day in the crockpot.

    • Yield: 10 Servings

    Ingredients

    • 2½ pounds boneless pork roast
    Linda’s MoJo Marinade
    • 1 white onion, chopped
    • 2 tbsp minced garlic
    • 2 cups orange juice
    • 1 tbsp fresh lemon juice
    • 4 tbsp fresh lime juice
    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • 2 tsp dried oregano
    • 1 tsp ground black pepper
    • 2 tsp salt
    How to Make It
    1. Cut the pork roast into 2-inch squares and layer in the crockpot
    2. In a small bowl, combine the marinade ingredients and pour over the pork.
    3. Set the crock pot on low for 8 hours.
    4. Before serving, shred the pork with two forks. Serve with Black Beans and Rice.
