    Dairy-Free Keto Vanila Bean Ice Cream Recipe

    Ketogenic Cookbook - Nutritious Low-CarbThis recipe, and the Dairy-Free Keto Chocolate Ice Cream, contains raw eggs. Salmonella is rare—only about 1 in 20,000 eggs are infected—but young children, pregnant women, the elderly, and people with compromised immune systems should probably avoid raw eggs just in case. For the rest of us, be aware of the risk and decide for yourself whether it’s worth it. I love these ice cream dishes, and for me, the risk is low enough that it doesn’t affect my enjoyment of them.

    Adding salt to desserts naturally brings out flavor, including sweetness, which means that you often need less sweetener. Salt is even more important when making ice cream because it helps keep the ice cream soft and scoopable. Please don’t forget to add the MCT oil; if you do, the ice cream liquid will curdle.

    • Yield: 3 cups (¼ cup per serving)
    • Preparation Time: 10 Minutes

    Ingredients

    • ¾ cup plus 2 tablespoons coconut oil (or unsalted butter if not dairy-sensitive)
    • ¼ cup MCT oil
    • ½ cup unsweetened almond milk or water
    • 4 large whole eggs
    • 4 large egg yolks
    • 1 vanilla bean (about 6 inches long), split lengthwise and seeds scraped
    • 1 teaspoon vanilla extract
    • ¼ cup powdered erythritol or 1 teaspoon stevia glycerite
    • ¼ teaspoon fine sea salt
    How to Make It
    1. In a blender, place the coconut oil, MCT oil, almond milk, whole eggs, yolks, vanilla bean seeds, erythritol, and salt. Blend until very smooth. Taste and add more erythritol if desired.
    2. Pour into an ice cream maker and churn according to the manufacturer’s directions, and watch the magic happen!
    3. Store in an airtight container in the freezer for up to a month.
