    Low-Carb Slow Cooker 218 healthy recipes for your favorite comfort foods

    • Yield: 6 Servings (1 cup pork mixture and ½ cup rice each)
    • Preparation Time: 20 Minutes

    Ingredients

    • 1 large onion, cut into thin wedges
    • ½ lb boneless pork loin, cut into 1-½-inch pieces
    • 2 large tomatoes, coarsely chopped (1-1⁄3 cups)
    • 16 oz  jar green salsa (salsa verde)
    • ½ cup reduced-sodium chicken broth
    • 2 cloves garlic, minced
    • 1 tsp ground cumin
    • ¼ tsp black pepper
    • 3 cups hot cooked brown rice
    • Snipped fresh cilantro
    How to Make It
    1. In a 3-½- or 4-quart slow cooker place onion and pork. Top with tomatoes, salsa, broth, garlic, cumin, and pepper.
    2. Cover and cook on low-heat setting for 6 to 6-1⁄2 hours or on high heat setting for 3 hours. Serve with hot cooked brown rice and top each serving with cilantro.
