Blend the coconut in a blender for a finer texture. If the porridge is made in advance, the coconut will be even softer. Add additional protein to make a complete meal; eggs (cooked any way) and bacon are delicious!

    Ingredients

    • 4 tablespoons (20 grams) or 4 dried shredded coconut, unsweetened
    • 1 tablespoon (8 grams) oat bran
    • 1 tablespoon (7 grams) flaxseed meal
    • ½ tablespoon (7 grams) butter (reserve for the top if desired)
    • ¾ teaspoon (3.5 grams) Truvia (1 packet)
    • ½ teaspoon (1 gram) cinnamon
    • ½ cup (60 grams) 36% heavy cream
    • 1 cup water
    • Pinch of salt
    How to Make It
    1. In a small pot, add all of the ingredients and use a whisk to combine very well.
    2. Heat over medium-low heat until boiling. Once the mixture has boiled, remove from the heat and transfer to a serving bowl. The porridge will continue to thicken as it cools.
