    How to Make Dad’s Tenderloin Bites

We bond over a lot of things, including a love of bow hunting, which he taught me how to do. He made this simple dish for me at his cabin ten years ago, and it is still a crowd-pleaser at parties! I modified his recipe to eliminate the sugar and soy sauce to make it keto-friendly. He now follows this recipe.

    • Yield: 4 Servings
    • Preparation Time: 10 Minutes
    • Cooking Time: 5 Minutes

    Ingredients

    • 1 1-pound) venison or beef tenderloin, cut into 2-inch cubes
    • 1 (16-ounce) package bacon
    • Green Goddess Dressing, for serving (optional; omit for egg-free)
    Marinade
    • ½ cup coconut aminos or wheat-free tamari
    • 3 tablespoons MCT oil
    • 2 teaspoons Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener
    • 1 tablespoon grated fresh ginger
    • 1 teaspoon finely chopped garlic, or cloves from ½ head roasted garlic
    How to Make It
    1. In a bowl, mix together the marinade ingredients. Add the tenderloin pieces, toss to coat in the marinade, cover, and place in the refrigerator to marinate for at least 2 hours or overnight.
    2. Place an oven rack in the top position and preheat the oven to broil.
    3. While the oven is heating up, assemble the bites
    4. Cut the bacon slices in half crosswise. Take a piece of marinated meat and wrap it with a halved bacon slice. Secure with a toothpick and place on a rimmed baking sheet. Repeat with the rest of the meat and bacon.
    5. Place the baking sheet under the broiler. Broil for 5 minutes for medium-rare or until done to your liking (they will continue to cook after you remove from the oven). Serve with Green Goddess Dressing, if desired.
