    How to Make Fried Parmesan Tomatoes

    Ketogenic Cookbook - Nutritious Low-Carb

    Ingredients

    • 4 tablespoons coconut oil
    • 2 large eggs
    • ½ cup grated Parmesan cheese (about 2 ounces)
    • 1 large yellow or green tomato, cut into ½-inch-thick slices
    How to Make It
    1. In a sauté pan over medium-high heat, heat the coconut oil.
    2. Beat the eggs in a shallow dish.
    3. Place the grated Parmesan in a separate shallow dish.
    4. Dip each slice of tomato into the egg to coat, then into the Parmesan. You may need to use your hands to push the Parmesan onto the tomato.
    5. Place the cheese-coated tomato slices in the hot oil, working in batches if needed so as not to overcrowd the pan. Fry until the cheese is golden brown on each side of the tomato.
