    How to Make Grilled Halloumi with Prosciutto and Pesto

    Ketogenic Cookbook - Nutritious Low-CarbHalloumi is a slightly rubbery and firm cheese that is delicious but on the salty side. The texture reminds me of a thick feta, but it has a different flavor profile. Halloumi has one unique quality: you can grill or fry it! When heated, Halloumi gets creamy and its saltiness subsides, making it into a robust, savory morsel.

    • Preparation Time: 5 Minutes
    • Cooking Time: 12 Minutes

    Ingredients

    • ½ pound Halloumi cheese, cut into ¼-inch-thick slices
    • 1 tablespoon MCT oil or melted unsalted butter
    • 6 slices prosciutto
    • ¼ cup pesto
    • ½ cup chopped yellow tomato
    • Fresh marjoram or basil leaves, for garnish (optional)
    How to Make It
    1. Preheat a grill or panini maker to medium-high heat.
    2. Brush each side of the cheese slices with MCT oil or melted butter. Place onto the hot grill or panini maker for 3 minutes on each side, or until golden brown with grill marks. Meanwhile, place the prosciutto onto a serving platter, leaving a little space between each slice.
    3. Remove the cheese slices from the grill and divide equally among the prosciutto. Sprinkle evenly with the pesto and yellow tomato. Sprinkle a few fresh marjoram or basil leaves around the platter, if desired. Serve warm.
