    Cook Healthy and QuickThis simple stir-fry is light, yet full of flavor and color. The lime gives it an added zing that pairs well with the sweetness of the toasted cashews and crunchy vegetables.

    Ingredients

    • ½ cup uncooked millet
    • ½ cup cashew nuts
    • 2 tbsp light olive oil
    • 3¾ oz (110 g) carrot, coarsely chopped
    • 3¾ oz (110 g) cabbage, coarsely chopped
    • 3½ oz (100 g) bean sprouts
    • 3 oz (80 g) red onion, thinly sliced
    For the Sauce
    • 1 lime juice and ½ grated lime zest
    • 2 tbsp soy sauce
    • 2 tbsp honey
    • 1 red chile, seeded and finely chopped
    For a Gluten-free option
    • use gluten-free tamari to replace soy sauce
