    How to Make Nutty Yogurt and Melon Sundaes

    Healthy Cooking for DiabeticsColourful and tempting, this refreshing breakfast is a perfect start to the day when you feel like something light.

    • Yield: 4 Servings
    • Preparation Time: 10 Minutes

    Ingredients

    • 7 oz (200 g) low-fat bio yogurt
    • 7 oz (200 g) low-fat soft cheese or quark
    • 1 tsp stevia granules
    • 1 oz (30 g) pistachio nuts, roughly chopped
    • 1 oz (30 g) toasted flaked almonds
    • 7 oz (200 g) watermelon chunks
    • 1 oz (30 g) pomegranate seeds
    How to Make It
    1. In a mixing bowl, thoroughly combine the yogurt, soft cheese and stevia granules.
    2. Stir in half the pistachio nuts and flaked almonds.
    3. Divide the watermelon chunks between four serving glasses and spoon a quarter of the yogurt mixture over the top of each.
    4. Sprinkle with the remaining nuts, followed by the pomegranate seeds, and serve the sundaes immediately.
