    How to Make Rhubarb Crumble

    Simple, Fresh & Healthy A Collection of Seasonal RecipesCrisps and crumbles are so easy to make. Much easier and healthier than a pie!

    • Yield: 12 Servings

    Ingredients

    Rhubarb Filling
    • 2 pounds fresh rhubarb cut into ½-inch pieces (or two 1-pound packages, frozen)
    • 1¾ cups sugar
    • 1 tbsp cornstarch
    • 1½ tsp vanilla extract
    Topping
    • 0.66 cup oatmeal (not instant)
    • 0.33 cup brown sugar
    • 0.33 cup pecan or walnut halves
    • 2 tbsp canola oil
    How to Make It
    1. Preheat oven to 400 degrees.
    2. Coat a 13-by-9-inch baking dish with cooking spray.
    3. Toss all rhubarb filling ingredients together and allow fruit to macerate for about 15 minutes.
    4. Place all topping ingredients into the bowl of a food processor. Process until mixture just holds together.
    5. Spoon rhubarb mixture into the baking dish. Cover with topping mixture.
    6. Bake 35-40 minutes until top is browned and mixture is bubbling.
