    Low-Carb Slow Cooker 218 healthy recipes for your favorite comfort foods

    Ingredients

    • ½ lb lean ground pork
    • 1 large onion, chopped (1 cup)
    • 15 oz cans Great Northern beans, rinsed and drained
    • ½ cups green salsa
    • 1 cup reduced-sodium chicken broth
    • ¾ cup water
    • ½ tsp ground cumin
    • 2 Tbsp snipped fresh cilantro
    • ¼ cup light sour cream (optional)
    • Fresh cilantro sprigs (optional)
    How to Make It
    1. In a large skillet cook pork and onion over medium heat until meat is browned and onion is tender. Drain off fat. Transfer meat mixture to a 3-½- to 4-½-quart slow cooker. Stir in beans, salsa, broth, the water, and cumin.
    2. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-½ to 4 hours. Stir in snipped cilantro. If desired, top each serving with sour cream and cilantro sprigs.
