    Pineapple Chicken with Spicy Lentils Recipe

    Low-Carb Slow Cooker 218 healthy recipes for your favorite comfort foods

    Ingredients

    • 8 chicken drumsticks (about 3 lb.), skinned
    • 8 oz can pineapple slices (juice pack)
    • 1 cup red lentils, rinsed and drained
    • 1 cup unsalted chicken stock
    • ½ cup chopped onion
    • 2 cloves garlic, minced
    • 1 fresh jalapeño pepper, thinly sliced crosswise
    • 1 tsp Chinese five-spice powder
    • 1 tsp ground cumin
    • ½ tsp salt
    • ¼ tsp ground ginger
    How to Make It
    1. Coat an extra-large nonstick skillet with cooking spray; heat over medium-high heat. Add chicken and cook for 10 minutes or until browned, turning once.
    2. Drain pineapple slices, reserving the juice. Halve pineapple slices and chill until serving time. In a 4- to 5-quart slow cooker combine reserved pineapple juice, lentils, stock, onion, garlic, jalapeño, five-spice powder, cumin, salt, and ginger.
    3. Place chicken drumsticks on top of lentil mixture. Cover and cook on low-heat setting for 3-½ to 4 hours. Serve chicken with reserved pineapple.
