    Sweet Potato Fries Recipe

    Healthy Cooking for DiabeticsOrange-fleshed sweet potatoes make a simple and tasty alternative to regular chips in this delicious, low-fat recipe.

    • Yield: 4 Servings
    • Preparation Time: 10 Minutes

    Ingredients

    • 1 tbsp ground nut oil
    • 4 sweet potatoes, about 175 g/6 oz each
    • ½ tsp salt
    • ½ tsp ground cumin
    • ¼ tsp cayenne pepper
    How to Make It
    1. Preheat the oven to 230°C/450°F/Gas Mark 8. Brush a large baking tray with a little of the oil.
    2. Peel the sweet potatoes and slice into 5 mm/¼ inch thick spears about 7.5 cm/3 inches long. Spread the sweet potatoes on the prepared baking tray, pour over the remaining oil and toss to coat.
    3. In a small bowl, combine the salt, cumin and cayenne pepper. Sprinkle the spice mixture evenly over the sweet potatoes and then toss again.
    4. Spread the sweet potatoes out into a single layer and bake in the preheated oven for about 15–20 minutes, or until cooked through and lightly coloured. Serve hot.
