    Walnut & Green Bean Salad Recipe

    Keto Recipes for Accelerated Weight LossThis quick and easy salad is a perfect summer meal. Light and nutritious, it makes for an excellent lunch especially on days when you are over burdened with work.

    • Yield: 2 Servings

    Ingredients

    • 3 Cups Green Beans (Cut each bean into half)
    • 1 Red Onion
    • ½ Cup Walnuts
    • Salt and Pepper to taste
    • 2 Tbsp Olive Oil
    • 1.5 Tbsp Balsamic Vinegar
    How to Make It
    1. Chop the Green Beans into 1.5 -2 inch pieces (make it easy to eat).
    2. Cut the red onion into quarters.
    3. In a pan lightly toast the walnuts, without any oil.
    4. Take a large pot of hot salted water, and throw in the green beans. Let them blanch in the pot for 5-8 minutes. The beans should still have their crunch so avoid blanching them for too long.
    5. Remove the green beans and put them in cold water or a bowl of ice cubes to prevent them from cooking further.
    6. Mix the salt, pepper, balsamic vinegar and olive oil in a bowl. This is your dressing for the salad.
    7. Mix the green beans, onion and walnuts in a bowl. Pour the dressing over and toss the salad well.
