    15-Minute Soup Recipe

    Cook Healthy and QuickThis simple soup is prepared with a premade broth in Spain leftovers from one of the bean soups popular at midday, flavored with diced Serrano ham and parsley, and fortified with hard-boiled egg.

    • Yield: 4 Servings
    • Preparation Time: 5 Minutes
    • Cooking Time: 25 Minutes

    Ingredients

    • 3½ cups hot chicken or beef broth
    • 2 tbsp rice
    • 4 tbsp diced Serrano ham
    • 2 eggs, hard-boiled and chopped
    • 1 tbsp finely chopped flat-leaf parsley
    • 1 tbsp finely chopped mint (optional)
    For a gluten-free option
    • use gluten-free stock
    How to Make It
    1. In a large pan, bring the broth, rice, and ham to a boil. Reduce the heat and simmer for 15 minutes, or until the rice is nearly tender.
    2. Add the eggs and simmer for another minute. Remove from the heat, then stir in the parsley and mint, if using. Serve piping hot.
