    Eggs in Purgatory Recipe

    Ingredients

    • 1 tablespoon coconut oil or other keto-friendly fat, for frying
    • ¼ pound chorizo or Italian sausage, removed from casings
    • ¼ cup diced onions
    • 1 teaspoon finely chopped garlic, or cloves from ½ head roasted garlic
    • 1 cup diced tomatoes with juices, jarred or fresh
    • 1 tablespoon tomato paste
    • 2 tablespoons smoked paprika
    • 1 teaspoon fine sea salt
    • 4 large eggs
    • Chopped fresh herbs of choice, for garnish (optional)
    How to Make It
    1. Heat the coconut oil in a large cast-iron skillet over medium heat. Add the sausage, onions, and garlic and cook until the sausage is cooked through, about 5 minutes, stirring to break up the sausage.
    2. Add the tomatoes with juices, tomato paste, paprika, and salt and stir until well combined.
    3. Crack the eggs over the tomato mixture, cover, and cook for 7 minutes, or until the eggs are cooked to your liking. Garnish with fresh herbs, if desired.
